Last week did not go exactly as I planned…  A virus has meandered through our house, and settled for an extended stay with my youngest son and myself.  That meant that half of the household was not eating, and 100% of the the household was not cooking.

SO, the nachos that I planned turned into a father and son card game with munchies.  The people at Garden Fresh Gourmet make an Artichoke Garlic Salsa that doesn’t last an hour in our house (and is the only form of artichoke the boys will eat).  The avocado can go on a salad or sandwich later.

The stuffed shells never got stuffed, and when I dragged myself to the kitchen today the sausage was still frozen, and I still really don’t feel like cooking or eating, so the boys are going to get their favorite slacker mom meal, Kid’s Lasagna, which is really just mac and cheese layered with meat sauce.  If by layer you mean slapped in a bowl while I can still stand, which I do.

Being optimistic, Chicken Marengo is on the menu.  It’s chicken stewed in tomatoes and broth with herbs, and then you add sautéed mushrooms and caramelized pearl onions.   That will go nicely over whole-wheat couscous, and whatever green vegetable I can pull out of the garden.

I picked up some steaks that were on sale – so will use the marinade from Marinated Grilled Flank Steak, grill,  and serve them with a BLT Salad.

Thursday is going to be another attempt at Sausage Stuffed Shells.

Friday they’re on their own – because it’s girls’ camping weekend.  That menu is almost set but includes testing a lentil salad recipe, a quinoa risotto, and bruschetta kabobs. (quirky)
