No Roll Pie Crust

1 1/2 cups   all-purpose flour
3/4 tsp   salt
2 tbs   sugar
1/8 tsp   baking powder
1/4 cup   butter, frozen
1 tbs   cream cheese, at room temperature
2 tbs   milk - skim, or anything you have
1/4 cup   vegetable oil

Instructions

  • Whisk the dry ingredients in a large bowl.
  • Grate the butter over the top of the dry ingredients (you can grate in advance).
  • Use a fork to flick bits of cream cheese all over the top.
  • Toss with your fingers until well incorporated, but don't overwork it and melt the butter.
  • Add milk and oil and stir with the fork until it's well mixed. It does not look good at all, don't worry as long as it's well mixed!
  • Use your hands and pat it into the pie plate and up the sides making it as even as possible.
  • Put in the freezer for at least 10 minutes.
  • Fill and bake, or, if you need a baked pie shell:
  • Preheat the oven to 350, line the frozen crust with foil and fill with beans or rice (can't use them for eating after this) and bake 10 minutes. Remove the foil and bake another 5 minutes, until the crust is golden.
